Grilled Cheese Sandwich

Well, I still have a lot of brioche to use up, so I tried it on a grilled cheese sandwich.


Grilled cheese with brioche has an amazing buttery flavor.  Of course, it is a bread full of eggs and butter, coated with butter and filled with cheese.

What a poignant time to receive the news that my cholesterol is slightly elevated since I became a vegetarian.  Now for the record, the brioche was baked after I had the blood work done!  But obviously, two loaves of brioche is a saturated fat nightmare and the only course is to freeze the remaining loaf.

Now I'm going to have to do some shuffling in my diet because I think that I had really started to rely on cheese as a source of protein and dietary fat.  I'm confident I can get enough protein with less cheese, but finding adequate fat sources that are good for my blood cholesterol will be more tricky.  Research time!
